Ingredients
- 2 ounces Hendrick’s Gin
- 1 ounce fresh lemonjuice
- 1 teaspoon local honey
- 1 ounce Port and Elderberry Syrup
Port and Elderberry Syrup
- 1 cup fresh elderberries
- ½ cup port
- 2 tablespoons sugar (or more, depending on sweetness of elderberry crop)
- Pinch of salt
Preparation

Combine the gin, lemon juice and honey in a cocktail shaker, then top it off with ice; shake well. Strain into a glass of crushed ice. Top with the syrup.
Port and Elderberry Syrup
Bring all the ingredients to a boil in a small saucepan over medium-high heat. Let cool slightly, then transfer the mixture to a blender and process until smooth. Strain through a fine-mesh sieve into a jar with a lid. Seal and store in the refrigerator.
