Ingredients
- 1 (15.5-ounce) can of chickpeas (rinsed and drained)
- 2 peaches (skin and pit removed)
- 10 grape tomatoes, chopped
- ½ mango, chopped (or 1 cup sweet corn kernels, or as much as you like)
- 2 tablespoons pomegranate seeds
- 2 tablespoons diced red onion
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne
- Juice of ½ lime
Preparation
Add the above ingredients into a bowl and mix. Enjoy on its own or with tortilla chips. Store leftovers in an airtight container and refrigerate.
