Chickpea Peach Salad

Ingredients

  • 1 (15.5-ounce) can of chickpeas (rinsed and drained)
  • 2 peaches (skin and pit removed)
  • 10 grape tomatoes, chopped
  • ½ mango, chopped (or 1 cup sweet corn kernels, or as much as you like)
  • 2 tablespoons pomegranate seeds
  • 2 tablespoons diced red onion
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne
  • Juice of ½ lime

Preparation

Add the above ingredients into a bowl and mix. Enjoy on its own or with tortilla chips. Store leftovers in an airtight container and refrigerate.
