In the past 10 years, demand has intensifi ed for local food and drink. In 2007, New Jersey had a smattering of farmers’ markets and 16 breweries. Restaurants with a farm-to-table emphasis were just beginning to open (A Toute Heure in Cranford, which opened in 2007, was one of the fi rst.) That has all changed today. The food culture of New Jersey is booming as the Garden State enthusiastically supports its farmers, chefs, vintners, brewers, food artisans and purveyors.
