Taylor ham ice cream. At Windy Brow Farms, it’s become reality.

Windy Brow, in Fredon, a small township in Sussex County, has been an operable farm since 1946. It offers pick-your- own fruits, seasonal vegetables and a full service bakery teeming with pies and pastries. When managing partner Jake Hunt realized he had a knack for ice cream, the farm’s next step was clear: a creamery.

Now in its fifth year; Windy Brow's creamery is celebrating by digging deep into New Jersey’s roots. The shop is taking New Jersey favorites and giving them an icy twist by releasing five new ice cream flavors throughout the summer. It’s called the “Only in Jersey” collection and features flavors that represent five New Jersey assets: cranberries, blueberries, corn, tomatoes and Taylor ham (also known as pork roll).

“We came up with the ‘Only in Jersey’ collection to celebrate our roots as a family, [which has] been in Jersey a very long time, and to celebrate the state as a whole,” says Hunt.

The Taylor Ham + French Toast ice cream, which debuted at Windy Brow in April, starts with maple ice cream made from locally sourced syrup from The Farm at Gnome Hollow. Pieces of homemade challah French toast and caramelized Taylor ham complete the sweet and salty flavor The concept has struck a chord with food media as well as customers. Hunt and his NJ-inspired flavor have been featured by the Los Angeles Times, Food + Wine and the Huffington Post, to name a few.

Other flavors debuting throughout the summer include Cranberry Creamsicle, Blueberry Buttermilk Crisp and Sweet Corn Custard (with honey and corn bread).The collection will finish at the end of the season with Windy Brow’s Tomato Pie ice cream, which is made with a ricotta base and includes roasted tomatoes, balsamic and basil.
