Ingredients
- ½ cup olive oil
- 6 garlic cloves, minced
- 6 fresh Roma tomatoes, chopped
- ¾ cup fresh basil, torn leaves
- 2 teaspoons dry oregano
- Pepper and salt (to taste)

- 1 yellow onion, coarsely chopped

- ¾ pound ground turkey, preferably ground turkey breast
- 6 fresh Roma tomatoes, chopped
- ¾ cup fresh basil, torn leaves

Preparation
Spaghetti Squash
Preheat oven to 400°. Slice whole spaghetti squash lengthwise. Scoop out insides and discard (or save for compost). Line a large baking pan with foil. Drizzle tops of squash with a small amount of olive oil and place skin side up on baking pan. Cook at 400° for 45–50 minutes, or until tender. Use a fork to scrape out the “spaghetti.” Top with Sicilian Sauce and ground pepper to taste.
Sicilian Sauce (Vegan)
Heat olive oil in a pan. Add garlic and cook on low heat until translucent. Add chopped tomatoes and basil. Add oregano, pepper, and salt, to taste. Simmer for 20–30 minutes.
Sicilian Sauce (with Ground Turkey)
Follow instructions for Spaghetti Squash. When preparing Sicilian Sauce, add ¾ pound ground turkey (preferably ground turkey breast) to your ingredient list.
Heat olive oil in a pan. Add onion and garlic and cook on low heat until translucent. Add the ground turkey and cook until there is no longer any pink turkey.Add chopped tomatoes and basil. Add oregano, pepper, and salt, to taste. Simmer for 20–30 minutes.
