- 2 cloves garlic, minced
- ½ yellow onion, finely chopped
- 4 tablespoons extra-virgin olive oil (divided)
- ½ teaspoon Himalayan salt, plus more to taste
- 2 tablespoons green peppercorns
- 1 (16-ounce) can cannellini beans
- ½ teaspoons ground turmeric
- Juice of one lemon
Instructions
Sauté the garlic and onions in half of the olive oil until softened; add the salt and green peppercorns. When the onions are soft, add the beans and sauté until they are warmed through. Add the sautéed ingredients to a food processor and, while blending, add the turmeric, remaining oil, a squeeze of lemon and additional salt to taste. Chill and serve with your favorite veggies, crackers or bread. Enjoy!
