Ingredients
- 6 ounces raspberries
- 6 ounces blackberries
- 6 ounces blueberries
- 1 teaspoon lemon juice
- 6 ounces cranberry or other berry Shandy
- 2 ounces sugar
- 1 strip orange peel
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- ¼ teaspoon salt
- 1 teaspoon baking powder
- 4 tablespoons melted butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup milk
Preparation
Make the compote: In a small saucepan over high heat, combine raspberries, blackberries, blueberries, lemon juice, beer (Shandy), sugar, and orange peel and bring to boil. Boil for 1 minute and reduce heat to medium-low and simmer vigorously until the berries burst open, releasing their liquid. Reduce liquid down by ½ for about 15 to 20 minutes. Remove from heat and allow to cool slightly before serving.
Note: The sugar level can be increased or decreased depending on your taste. The sweetness or tartness of the berries varies though out the year.
Make the waffles: In a mixing bowl, whisk together flour, sugar, salt, and baking powder until well combined. Transfer bowl to a standing mixer or using a hand mixer add butter, eggs, vanilla, and milk and combine until a batter forms.
Set up and heat waffle maker according to manufacturer’s instructions. Add a scoop of batter to waffle maker and cook for 2 to 3 minutes, or until golden brown. Remove and serve with berry compote.
