Mediterranean Meets Mexican in The Taco•ish Food Truck
Like many restaurateurs, Chef Constantine Kalandranis of The Greek•ish in Harrison and Nyack and TT’s in Montauk, NY, took the pandemic as an opportunity to try something new. Now, he’s bringing the farm-to-table concept to new heights alongside Stokes Farm in the form of The Taco•ish, a Mediterranean-meets-Mexican food truck, which parks on the grounds at Stokes Farm and serves dishes made with its farm-fresh ingredients.
“We wanted to do something that was light and breezy to add some texture to our brand,” Kalandranis says. As for the ingredients, he tries to source as much as he can from the farm. “There are some things we can’t get from Stokes, but all salsas are made with their tomatoes, their spring onions,” he says. “And beautiful hot peppers.”
The menu includes beef birria and lime chicken tacos, plus plenty of salsas and dips, among other options; customers can relax and enjoy a meal while visiting the farm every Tuesday–Saturday from 11am to 5pm. Plans for a second truck are already in the works, though its location might differ. “It will be another arm of what we’re doing already,” Kalandranis explains. “We don’t think it will be solely tacos but something that resembles fresh ingredients and farm products.”
