Here is something we like to do with strawberries (which are a U-pick crop on our farm). It’s easy to make—if you can boil water, you can make this recipe! It’s also a great use of berries that are going past their prime. Use the simple syrup to sweeten lemonade, cocktails, and mocktails.

Strawberry Simple Syrup
Ingredients
- 1 cup water
- 1 cup granulated white sugar
- 2 cups fresh or frozen strawberries hulled(green leafy tops removed)
Instructions
- Place all ingredients in a small saucepan. Bring to a boil. Reduce heat and simmer for about 5 minutes, until sugar has dissolved and strawberries have softened.
- Pour the syrup through a fine-mesh strainer to remove strawberry solids. Cool and store in a glass jar in the fridge. You will have a bright red sweet liquid.
For a Spring Cocktail (or Mocktail):
- Mix together strawberry simple syrup, lemonade (we are fans of Joe Tea!), lime juice, tequila, and triple sec (or omit alcohol for a just-as-refreshing mocktail). Pour over ice to taste, relax, and enjoy!
