
Holiday Shortbread Cookies
Courtesy of Mueller’s Bakery. Great for gifting and snacking, the shortbread has a perfect snap, followed by a melt-in-your-mouth lushness.
Ingredients
- ½ cup confectioners’ sugar
- ¼ teaspoon salt
- 1 cup sweet (unsalted) butter, softened
- 2 cups pastry flour
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350°F. Cream sugar, salt, and butter until light, about 15 minutes. Add flour and vanilla and combine. Turn out onto counter and roll into 2-inch-thick log. Wrap in plastic wrap and refrigerate until firm, about 1 hour. Cut ¼-inch-thick slices and place ½ inch apart on parchment-lined cookie sheet. Bake 16–18 minutes, until firm. Cool and enjoy.
