
Cucumber-Watermelon Salad

Ingredients
- 4 cups cubed ripe watermelon
- 2 cups cubed cucumbers
- ¼ cup finely chopped sweet onion
- â…“ cup fresh lime juice
- ¼ cup finely shredded fresh mint leaves
- Salt and pepper to taste
Instructions
- Gently toss all ingredients together and chill 1—2 hours before serving.
