
Cauliflower Soup
Cauliflower is grown throughout New Jersey and will be easily available at farmers’ market tables this season. Be sure to add it to your fall repertoire.
Instructions
- Warm a generous pour of olive oil in soup pot, add a sliced onion, and cook low and slow until onions are very soft, about 20 minutes. Add a chopped head of 1 cauliflower and 4 cups water; simmer for approximately 1 hour. Purée and season well with salt.
