Beer Berry Compote

This is a quick recipe that comes together on the mornings when you want to get through all of those extra berries you picked up at the farmers’ market before they turn. A few simple pantry staples, a few dashes of beer, and soon breakfast is ready. In the cooler months try adding a pinch of nutmeg and cinnamon to the compote for a festive variation.

Ingredients
  

Compote:

  • 6 ounces raspberries
  • 6 ounces blackberries
  • 6 ounces blueberries
  • 1 teaspoon lemon juice
  • 6 ounces cranberry or other berry Shandy
  • 2 ounces sugar
  • 1 strip orange peel

Waffles:

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • ÂĽ teaspoon salt
  • 1 teaspoon baking powder
  • 4 tablespoons melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk

Instructions
 

  • Make the compote: In a small saucepan over high heat, combine raspberries, blackberries, blueberries, lemon juice, beer (Shandy), sugar, and orange peel and bring to boil. Boil for 1 minute and reduce heat to medium-low and simmer vigorously until the berries burst open, releasing their liquid. Reduce liquid down by ½ for about 15 to 20 minutes. Remove from heat and allow to cool slightly before serving.
    Note: The sugar level can be increased or decreased depending on your taste. The sweetness or tartness of the berries varies though out the year.
    Make the waffles: In a mixing bowl, whisk together flour, sugar, salt, and baking powder until well combined. Transfer bowl to a standing mixer or using a hand mixer add butter, eggs, vanilla, and milk and combine until a batter forms.
    Set up and heat waffle maker according to manufacturer’s instructions. Add a scoop of batter to waffle maker and cook for 2 to 3 minutes, or until golden brown. Remove and serve with berry compote.
