
Prince William Wedding Cake
Theresa Gaffney“[Prince William] often recalls how his nanny, the late queen, would have it for tea when they were young boys. We make it around the holidays; it’s a big favorite. We call it Prince William Wedding Cake or Biscuit Cake.”

Ingredients
- 1 packet digestive biscuits(or 1 packet graham crackers)
- 2 cups chocolate chips
- ¾ cup heavy cream
- ½ stick unsalted butter
- ½ cup raisins
- ½ cup dried cranberries
- ½ cup chopped walnuts
- 1 cup candied or glace fruit
- 1½ ounces brandy (optional)
Instructions
- Crush the biscuits to dime-sized pieces—not too fine; you want chunks of biscuits.
- Melt chocolate with heavy cream and butter until creamy and smooth.
- Mix all fruit and nuts with crushed biscuits; fold in melted chocolate and brandy.
- Pour into a foil-lined cake tin, or a lined square baking sheet. Place in the refrigerator overnight. (If you use a baking sheet, you can cut the cake into squares to use as petit fours or give away as a boxed gift—they are so delicious!)
- Once the cake has set, lift it out of the tin, peel off the foil, and place on a cake plate.
- We decorate it with cherries, nuts, and way too much scrumptious melted chocolate. Let it set in the refrigerator for half an hour, and it’s ready to serve. Top it with globs of whipped cream! It keeps for a week and can be frozen, so you can make it in advance.
