
Cantaloupe Water Ice

Ingredients
- 1 cup sugar
- ½ cup water
- 1 large ripe NJ-grown cantaloupe
Instructions
Make simple syrup:
- Combine sugar and water in a small saucepan, bring to a boil, and stir until sugar is dissolved. Cool completely.
Prepare fruit:
- Cut away rind, remove seeds, and cut flesh into chunks. Purée in a food processor or blender until smooth (or a little chunky, depending on preference).
- In a shallow, freezer-safe baking dish, combine syrup and purée. Freeze and stir with a fork every 2–3 hours until mixture becomes slushy. To serve, let sit at room temperature for 10–15 minutes and stir with a fork once more.
