Stark & Rosen

“I was a winemaker for 26 years and loved it, and then came cider and with it a creative freedom I have not known. Imagine thinking about Syrah with heat on the finish and concocting a blend of tart cherry, wild cranberry, and white pepper in a hard cider base that has similarities and its own life—and Pinelands Rosé was born. Freedom!” —Cameron Stark, Cidermaker

Charles Rosen founded Ironbound Hard Cider around a simple yet radical idea: that his company could make a quality product while also healing the environment, mending the social fabric, and treating its workers, suppliers, and customers with dignity—and that Ironbound Hard Cider would be successful because of the way it does business, not in spite of it. To that end, Ironbound is committed to creating well-paying jobs for the chronically underemployed, using regenerative farming practices, paying a fair price for local ingredients, and using only fresh-pressed apples grown in New Jersey and neighboring states. Ironbound’s cider team is led by Cameron Stark, an award-winning winemaker trained by Napa legends Bob Levy and Robert Sinskey. Stark applies his formidable skill to crafting distinctive, well-structured ciders with perfect balance, appealing mouthfeel, and a clean finish—as well as creating unique flavor combinations that celebrate New Jersey’s history, geography, and indigenous foods.
