The Gingered Peach is Bringing Rojo Roastery to Trenton

Joanne Canady-Brown, owner of The Gingered Peach and Melba in Lawrence Township and Rojo’s Roastery in Princeton, will be adding a new Rojo’s location—South Warren Street in Trenton—to her expanding queendom of artisanal treats.

“We have signed the lease with the intention to build Rojo’s Roastery’s flagship store in the heart of the Capital City,” says Canady-Brown. “It will be a coffee roastery, community gathering place, and additional baking and training space for The Peach. You’ll be able to look through glass doors inside and see the work being done. All the cold dough for brioches and croissants will be made there.

“To sweeten the deal, Rojo’s in Princeton got a fresh new look. The new space will be a larger interpretation of that. And pastry that our little bakery had to sideline many moons ago due to space constraints: DOUGHNUTS!”

Canady-Brown and her team are targeting a March 2025 opening.
